One of the staples of Japanese cuisine is noodles, like rice. There are several kinds such as soba, udon, or somen which include traditional Japanese noodles, and ramen or yakisoba which have been influenced by Chinese culture.
Somen are very fine white noodles prepared with wheat flour. They are usually eaten cold during the summer. Refreshing and very practical (only 1 to 2 minutes of cooking and easy to prepare) they are very popular with Japanese people. They can also be prepared hot in a broth or sautéed.
Hiyamugi noodles are one of the less fine varieties of Somen.
