Panko パン粉 is a typically Japanese breadcrumb and it differs from our Western breadcrumbs on many points:
Produced from bread crumbs, Panko breadcrumbs are less dense than breadcrumbs with a crust. Additionally, it is coarsely ground and its large flakes coat foods less compactly than crumbs, allowing some of the oil or frying fat to run off (rather than being absorbed).
The resulting breadings are less fatty, more airy, lighter, crispier and crunchier than ours!
