Medium grain #1000: for regular maintenance
This grain is particularly recommended for regular maintenance of your knives, because it allows you to maintain a good cutting level without excessively dulling them. In addition, its intermediate fineness is ideal for low HRC knives, thus avoiding excessive finishing which could be unnecessary on less rigid blades.

Before use, it is recommended to soak the stone for around fifteen minutes. Next, simply place your blade with about a coin's worth of space between the steel and the stone, then move back and forth using light pressure.
