Sparkling Junmai sake, 250ml- SHUWA SHUWA
"Shuwa Shuwa" is a Japanese onomatopoeia that refers to the sound of bubbles. This sparkling sake is a junmai sake, brewed with 70% polished rice. After the initial fermentation, the sake is bottled and undergoes a second fermentation, similar to the method used to produce champagne. The yeasts thus continue their work and produce more carbon dioxide, responsible for the natural effervescence of this sake.
Alcohol content: 5.5°
Appearance :The foam is intense and has a beautiful bright white color. The bubbles are numerous and dynamic. The sake is pearl colored, slightly cloudy and shiny.
Nose: : The nose is fresh with coconut water, peach and mint icy reminiscent of after eight. It's round, delicate and very appreciable served chilled. The whole thing is light and delicate. The sake opens little by little, always fresh, with touches of verbena, cooked rice and pineapple.
Mouth : The mouth is like the nose: fresh. The attack is sweet with a little tangy side. It's a nice sake, light, easy to drink and perfect for the summer period. We find notes of cooked rice, apple but also flowers like mock orange, especially in the finish. The bubbles are present and add even more refreshment.
Pairing: Ideal as an aperitif, simply with a platter of cheeses, charcuterie or of crunchy vegetables but also to accompany an herb omelette or white tuna tataki with a tangy passion fruit sauce.
Tasting temperature: Cold
Ingredients:< /strong> Water, rice, koji.
Conservation: Store in a cool place and protect from light. After opening, consume quickly.
Kamikokoro Brewery was founded by Chojuro Fujii more than a century ago, in 1913, in the town of Asakuchi in Okayama. For 5 generations now, this brewery has pursued a single objective, that of producing quality sake that preserves the umami of rice. For this, the brewery has developed a particular process including a polishing machine that can polish up to 60kg of rice at the same time. Before being a producer, the brewery team places itself as a consumer and produces only healthy and good products that they would like to consume as a family.
